Let’s Snack!

I love a good snack.  I especially love one that’s easy to make but also twisted.

Take these pretzels.  They are so good.  Meeshie and my husband can’t stop eating them.  It’s that salty sweet thing.

These are not only a perfect snack, but a perfect gift.  Put these in a mason jar with a bow and give it to your child’s teacher.  Or give as a hostess gift.  Put these out during a party and see them disappear.

Truly, the hardest part of making these is deciding the pretzel shape.  Mix it up by  halving the white chocolate and using some milk chocolate too.  Or sprinkling with red and green sugar for holiday cheer.

But let’s not forget the wonderful aroma of the cinnamon.  This snack smells as good as it looks.  That’s probably why it moves out of the house so quickly.

White Chocolate Cinnamon Pretzels
  • 1  16- 18 oz Bag of Pretzels
  • 2/3 C Oil
  • 1/3 C Sugar
  • 1 ½ t Cinnamon
  • ½ Cup Cinnamon Sugar for sprinkling
  • 1 C White Chocolate Chips
Whisk together oil, sugar, and cinnamon.  Pour the pretzels into a microwave safe bowl and pour oil mixture in.  Stir until coated.  Microwave for 1 minute, remove and stir.  Microwave 45 seconds more.  Spread pretzels evenly onto two cookie sheets covered in parchment paper.  While still warm, sprinkle cinnamon sugar generously.   Pour the chocolate in a microwave safe bowl and microwave at 30 second increments until melted.  Drizzle over cooled pretzels.

A Chocolate Lover’s Dream

I love to read.  I’m always reading something.  Recently I found a book that also has recipes in it.  Unfortunately, I don’t like the book.  Fortunately, the recipes are good.  I found this recipe and have made it a few times.  Meeshie loves it.  I’ve brought it to work and it’s been a hit.  I knew it was a winner when one of the attorneys in the office gave me a hug.  I’ve never seen her hug someone before.  The things people do for chocolate.

These are a rich bar, so I prefer them with a small amount of nuts in between a few layers.  But, I’ll admit I don’t like chocolate as much as I love caramel.  This is definitely for the chocoholic in your life.  Make these and they will be putty in your hands.  I did mention I got a hug, right?

The book may be a bust, but the recipes have been great.  So if you see someone using their cell phone to take pictures of a recipe or two in the book section of your local Target, just keep walking.  I’ll act like I don’t see you either.

Chocolate Euphoria Bars

  • 1/2 C Butter, melted
  • 1 1/2 C Oreo Cookie Crumbs
  • 1 C Semi-Sweet Chocolate Chips
  • 2 C Mini Marshmallows
  • 1-14 oz can Sweetened Condensed Milk
  • 1 C White Chocolate Chips
  • 2 C Cocoa Puffs
  • 1 C Milk Chocolate Chips
  • 1/2 C Chopped Pecans (optional)

Combine the melted butter and Oreo crumbs.  Press them into a prepared 9×13 cake pan.  Layer the semi-sweet chocolate chips, marshmallows, sweetened condensed milk, white chocolate chips, cocoa puffs and milk chocolate chips.  If you are using the pecans, I added a small amount between the Oreo layer, after the sweetened condensed milk layer and on top.  Once assembled, press the layers into the pan with your hands.

Bake in a 350 degree oven for 20-25 minutes.  Remove from the oven and allow them to cool completely before cutting.  Cut them into bars.

Makes about 35 bars.

Chocolate Berry Streusel Bars

I’ve been baking these last two weekends.  Meeshie’s birthday part is next Saturday and I’ve made cupcakes and stuck them in the freezer.  I’m planning on sharing soon.  But even though I had to bake a batch of cupcakes twice (I made two flavors, and one of the flavors didn’t turn out right), I’m still baking today.

I found a recipe a few weeks ago for streusel bars with fresh strawberries.  I never seem to have fresh strawberries in the house long enough to bake with them.  But I do have dried strawberries.  I love the flavor of dried strawberries.  I also have dried cherries.  The flavor of dried strawberries and cherries together is wonderful.

This recipe really lends itself to your favorite fruit, fresh or dried.  Blueberries with blueberry jam?  How about raspberries with strawberry jam?  Dried apricot with peach jam?  Or how about mixing a few of your favorites together, like I did?  If you want to add a small amount of pecans.

White Chocolate Berry Streusel Bars

  • 2 C Oats
  • 1 1/2 C  Flour
  • 3/4 C Sugar
  • 3/4 C Brown Sugar
  • 1 t Baking Powder
  • 1/2 t Baking Soda
  • 1/2 t Fine Sea Salt
  • 1 C butter, cut into 1-inch pieces
  • 1/2 C Strawberry Jam (in a liquid measuring cup-4 oz)
  • 1 t Lemon Zest
  • 1 C Dried Strawberries, chopped
  • 3/4 C Dried Cherries, chopped
  •  3 oz. White Chocolate, melted

Preheat oven to 350 degrees F.

In a large bowl whisk together oats, flour, both sugars, baking soda, baking powder and salt.  Add in cold butter that has been cut into small pieces. Combine into dry ingredients either with your hands or a pastry cutter until butter is well incorporated as little crumbles. Remove 1 cup of mixture and with remaining mixture carefully pour into a prepared 15×10 jelly roll pan/cookie sheet. Press mixture into pan to create an even crust.  Place in oven and bake for 12-13 minutes or until it is firm to the touch. You do NOT want to brown this layer. Remove from oven.  Warm jam in microwave for 30 seconds. Add in lemon zest and then pour over warm crust. Spread berries over jam layer and then sprinkle with reserved 1 cup crumb mixture.Pop into the oven and bake for 20-25 minutes until topping is a light brown. Remove from oven and let cool 1 hour before drizzling with melted white chocolate. Cut into 24 bars.

I thought that I had some white chocolate in the pantry, but I used it all for my niece’s party.  I melted some Hershey kisses and drizzled them on top.  That being said I’m a huge fan of white chocolate and normally have it on hand.
